Simpler Fare

homemade tomato soup

Sometimes it seems like we are always cooking involved gourmet meals, even though Curt assures me that most of them are pretty simple to construct. Last night was pretty basic, soup and salad, but Curt put his own twist on it. The tomato soup was made with four tomato products we had put up from last years’ garden, sun-dried packed in oil (rinsed for the soup), roasted puree made with onion, garlic and chilis, roasted tomatoes packed in oil, and homemade paste. He combined these with 1/4 C chopped shallots and 1/4 C chopped celery leaves.  The base broth was a stock he had made earlier ( from bones and veggies) and had in the freezer. Put all together and puree. Sometime later I will add some of the tomato recipes to this site.
The salad was a mixture of greens, red onions and bell peppers with a creamy avocado dressing. The dressin started with greek yogurt and a basic vinegerette and had mashed avocado added. All this with a nice white wine and some homemade bread and we were happy diners on a Thursday night.
